Potato pancake

"Deruny", are potato pancakes, popular in Ukrainian, Polish, Belarusian, Czech, Slovak, Bulgarian, Austrian, and German cuisines. They are particularly widespread in the northern and western regions of Ukraine. The main ingredient of the dish is grated potato. The name "deruny" derives from the method of preparing the pancakes .

In Ukraine, deruny gained the highest popularity in the western and northern regions. Local potato scientists have developed varieties of deruny with fillings, fine and coarse grating, and more. Then they came up with a bunch of dressings, toppings, and sauces to please even the most discerning palate.

This led to the creation of deruny with egg, with meat, with sour cream, buttermilk, mushrooms, cheese, cracklings, and fried onions. Depending on the size of the grater and the type of potato used, deruny changed their color, consistency, and even aroma. The finished dish was served on a plate after frying, or in a pot after additional baking.

Nalysnyky

Pancakes, or “nalysnyky," are an exquisite dish deeply rooted in Ukraine's rich cultural heritage. This dish boasts a profound historical origin and holds a place of honor on Ukrainian tables.

Pancakes are made by thinly pouring batter onto a heated skillet. After baking, they are spread with various fillings such as cottage cheese with sugar, boiled eggs, berries, or meat. They are then rolled up and served with sour cream or syrup.

Over time, pancakes have come to embody the boundless creativity of chefs, allowing for experimentation with flavors and fillings. They can be sweet or savory, depending on  individual taste and preference.

Chicken Kyiv

Chicken Kyiv is a type of cutlet in the form of a battered chicken fillet wrapped in a piece of cold butter. The finished cutlet has an oval shape. Fry it in a deep fryer, pre-dipping it in a beaten egg and breadcrumbs. You can add grated cheese, mushrooms, greens, egg yolk and other ingredients to the butter.

Among its defining features are cooking from a whole chicken breast or a piece of veal, juicy meat, thin crispy breading, liquid fragrant oil inside, which should flow out when it is cut.

We cannot fail to mention an interesting fact about the cutlet that got its name "Chicken Kyiv". The speech of George W. Bush on  August 1, 1991 in Kyiv, in which he called on Ukrainians to remain a part of the USSR, went down in history under the name "Chicken Kyiv" ("cutlet in Kyiv"), since in the English language the word "chicken" has a figurative meaning "coward". Ukrainians reacted to this with humor, that's why they called this dish, and still gained independence from the USSR on August 24, 1991.

Carpathian Ukrainian traditional Bograch

 Bograch is a traditional Hungarian goulash prepared by housewives in Transcarpathia (region in Ukraine). Researchers believe that the name of the dish comes from the Hungarian name of the cauldron. Bograch was invented by shepherds. Going to graze cattle, they put a variety of food in a cauldron: meat, lard, vegetables. Then they cooked it all on an open fire for a long time and always added paprika.

Traditional bograch is prepared in the open air in a large cauldron. Most of the ingredients vary from house to house, but the large amount of meat (3 to 5 types) and the generous use of paprika remain the same. 

The earliest known farmers in the Ukraine were the Trypillians (4500–2000 B.C. ). The territory of the Ukraine had rich soil and a favorable climate perfect for cultivating crops. The Trypillians grew barley, millet, rye, and wheat. They also herded sheep, pigs, and cattle. Wheat was plentiful, and soon trading routes were established along Ukraine’s Black Sea coast to market the grain. The Ukraine territory became the crossing road connecting Arabia, Europe, and Asia.

Ukrainians proudly kept their native traditions, customs, and cuisine.

The national dish of Ukraine that undeniably originates from the country is borsch. However, varenyky, holubtsi and salo are also considered national favorites of the  Ukrainian people. Delicious and hearty Ukrainian dishes are widespread throughout the world. In Ukraine varenyky are not just a national dish, but also a special talisman. Ukrainian ancestors equated varenyk with a young moon since they have a similar form.  Ukraine voraciously absorbed the recipes of German, Hungarian, Turkish and other countries cuisines.

Varenyky were made with usual for Ukrainians cottage cheese, sauerkraut, mashed potatoes, mushrooms and fruits.

The name varenyky is nationwide, while the name “pierogi” derives from Western Ukraine and has Galician roots.

Borsch

Borscht is a traditional Ukrainian beetroot soup, which is very popular in many cuisines of Central and Eastern Europe. 

   As the homeland of beet borscht, Ukraine can boast of a wide variety of regional versions of the soup, almost every region has its own recipe.

   In Ukraine, borscht has long been considered a symbol of a strong family: all the ingredients in a pot are boiled, simmered, and then, grinding, they transfer their aromas and tastes to one, becoming one whole - rich, rich, thick. 1. In ancient times, Ukrainians traditionally prepared borscht for a memorial dinner, it was believed that the soul of the deceased flew to heaven with the steam from the borscht. 2. There are more than 70 compiled and described recipes for red borscht, the most complex and expensive of which is "Kyiv Borscht". Broth for it is made from beef, lamb and pork.

The difference between different types of borscht lies in the main ingredient. The main ingredient of real borscht is beetroot. But this dish can be prepared with tomatoes, cabbage, potatoes, and carrots as the main ingredients.

Shawarma (/ʃəˈwɑːrmə/; Arabic: شاورما) is a Middle Eastern dish originating from the Ottoman Empire. It consists of thinly sliced meat,  placed in an inverted cone and roasted on a fully rotating vertical spit or rotisserie. Traditionally made with lamb or mutton, it can also be made with chicken, turkey, beef or veal. Thin slices are cut from the cooking surface as it continuously rotates. Shawarma is a popular street food in the Middle East, including Syria, Egypt, Israel, Kuwait, Iraq, and other countries in the Levant, and is also popular in Saudi Arabia and the United Arab Emirates.

However, this dish is a very popular street food in Ukraine. Ukrainians Ukrainianized this dish by adding sauces made from sour cream, greens and garlic. What makes the dish more fragrant.

Pelmeni

Pelmeni were introduced into Ukrainian cuisine from the Finno-Ugric peoples. Finno-Ugrians froze Pelmeni and stored them in cellars or simply on the street. This dish was prepared after the sacrifice of livestock. Today, the traditional recipe for Ural Pelmeni is an equal mixture of pork, beef and lamb. And such Pelmeni were prepared exclusively by steaming. To this day, people in the Urals are very proud of their invention: dumplings are a national dish here, and in the  capital of Udmurtia, Izhevsk, there is even a monument to this culinary masterpiece.

Pelmeni have analogues in many countries of the world: in Georgia it is khinkali, in Italy it is ravioli, in the Caucasus it is manti, in China it is jiaozi, in Japan it is gedza, and so on. Each country has its own filling and recipe.
